You guys Erol my husband made my favorite matcha cake again. Basically, it is the variation of the traditional Trimasu cake we made according to our taste since we are a matcha lover house haaaa.

SO, let’s dive straight into the recipe……

The ingredients

Mascarpone cheese click here

Japanese green tea (yes use the best quality for the best results) click here

Gluten-free long cookies (ladies fingers) (we got the least sugary) click here

Organic culinary-grade matcha powder (I always get this one) click here

Organic Egg Whites liquid (giant should have it)

Organic heavy cream (taste is better) click here

Preparations: ~20 min

Matcha trimasu cake is one of the easiest and most delicious cakes to make as this doesn’t require any baking at all.

  1. Start with boiling green tea in a pot and once its color is dark green take it out in stainless steel bowl and put it in the freezer for about 20 min.
  2. Let it cool enough and start dipping the cookies in it one by one once it’s cooled down. You can take any decent-size tray that will fit all the cookies in there. The pack I bought had 15 cookies. The cookies are quite porous so make sure you don’t dip them long in a green tea liquid as they will become soggy (we learned it). Quickly take each cookie out so they remain crispy.
  3. Next, beat the egg whites.
  4. After whisking, I take 1/2 a bowl as it becomes quite creamy and fluff up.
  5. Next, whisk the heavy cream and fluff it up fully. Your goal is to cover the cookies fully so make sure you prepare enough mixture.
  6. Mix all the things together.
  7. Add culinary-grade matcha powder to it. We added 2 spoons. It depends on your taste so if you like darker colors and taste I’d add more.
  8. Once the batter is prepared, spread it evenly on the cookies and keep it even.
  9. Now put the next layer of cookies horizontally so the crisscross pattern holds it well and again spread the batter evenly. This way you will have 2 layers of cookies and 2 layers of cream cheese.
  10. Once done, put it in the fridge to chill for an hour at least.
  11. Serve cold and the cake should be in the fridge all the time if not eating.
  12. Sprinkle more matcha powder on top of your piece and enjoy the delicious cake!!
