Hey lovely mamas, here is the delicious gluten-free keto cake recipe that I made for my daughter’s first birthday. Just a little background no, I don’t do keto because of dieting but because I made it my lifestyle now. I eat ketoish and only carbs that I eat now are coming from veges and lentils. The reason I wanted to make a “clean cake” for my daughter is because I want her to find joy eating only clean and healthy things. I saw such cute photos of other babies doing cake smashes but those cakes have unfortunately artificial colorings and tons of sugar. I am not comfortable hooking her onto artificial foods as we all know bit by bit it becomes and addiction.

Let’s dive straight into out delicious GLUTEN FREE KETO CAKE……..

so this recipe is again inspired by so many mixture of recipes and the credit goes to all those people who put delicious keto cake recipes on Pinterest. I usually never follow any recipe fully as at this point I know my taste and I know how would that recipe would turn out to be. For example this recipe suggested 8 cups of sugar. I only used 2 cups of monk fruit sweetner.

Ingredients for the keto cake:

Ingredients for the cake to make wet :

  • 2 large eggs
  • 1 cup coconut or almond milk (I used condensed coconut milk)
  • 1/2 cup water
  • 1/4 or 1/2 cup coconut oil OR Ghee
  • 1/2 apple cider vinegar
  • 1 tbsp vanilla essence

Ingredients for the keto frosting:

  • 2 cup baking cacao powder
  • 1 keto sweetener of your choice
  • 1 cup mascarpone 🧀 (or cream cheese)
  • 2 tbsp vanilla essence
  • 2 cup melted butter

Preparations:

Preparation time: ~ 45 – 60 min

If you’ve got all the ingredients at home, making this cake is super easy. Since, it’s a gluten free keto cake those are the only flour options you have pretty much. I have tried only almond cake and only coconut flour cake as well but the consistency is never good unfortunately. Ig you want fluffy cake then I would highly recommend you use all these flour. Almond flour is granular, coconut flour is powder like, and tapoica or cassava flour is creamy so all these flours sit well together.

Mix all the dry ingredients in a large glass bowl (things don’t stick in glass). MAKE SURE you pass a;; the dry ingredients through stainer for the well rounded consistency. I forgot to do that and I spent another 20 min making the ingredients mixed well. Once you have all the dry ingredients mixed like a powder form, add all the wet ingredients which should be mixed well before you add them into a dry cake mix. Mix with a blender once both dry and dry ingredients are together in a glass bowl. Make sure you blend well for about 1 min.

Use about 2 8 inches cake molds for 2 tier cake or 3 tier cake. The cake would be thick enough. I was able to make 3 tier cake for my daughter’s first birthday. I bought cheap cake baking supplies from Amazon which helped me tremendously. Click here

Bkae for about 25 minat 250 degree and make sure you oven is preheated at 350 degrees as well. Once cooked let it FULLY cool down so the frosting sticks nicely. I made that mistake as well and my frosting melted LOL. Once fully cooled down, put frosting on top and in between the layer generous amount. Use any design you want and devour. Enjoy!!!
