Hey mamas, by now most of us if not all of us know how bad sugar is for the growing brains but sweet taste buds come first in life, aren’t they? To get that light and natural dose of sweetness, I make Edanur homemade sweets. I have posted tons of other recipes now on this blog. So here goes the other healthy recipe otherwise known as the carrot pudding. In Urdu, it is called “halwa” as well and there are many variations of that “halwa” but today we would stick with the simple one as it doesn’t fall in that traditional category of “halwa” because of the simplistic way it is cooked.

Carrots are full of beta-carotene, fiber, and potassium, and are rich in antioxidants. Above all, it is good for eye health and your toddler needs it every day for their eyes health.

Ingredients:

  • Organic baby carrots
  • Raw milk full fat (you can use pasteurized as well but don’t use ultra-pasteurized; taste differed a lot!)
  • Coconut milk (for dairy-free option)
  • coconut cream (for a dairy-free cheese option)
  • Sliced almonds
  • Slices pistachios
  • Sliced walnuts
  • Mixed black Raisins
  • Grass-fed butter (I used Danish or Vermont butter only; the taste differs again) click here
  • Turkish White Cheese (feta cheese click here equivalent of that OR paneer OR cream cheese) click here

Preparations: ~25 min

Cursh your 1/2 pounds of baby carrots first and let those cook in 1 liter of milk on a very low heat for about an hour (the quantity of milk should always be doubled than the carrots). Keep moving the carrots occasionally and see if mixing well. Your goal is to dissolve them well so pudding comes out smooth. Once the carrots are fully dissolved in the milk and no more liquid milk is left, take your hand blender and run through it once more. I use this Hamilton Beach hand blender and it is literally a life saving device. click here

Once the thick pudding is ready, add some crushed almonds, pistachios, and walnuts alongside some black raisins and let it simmer for another 15 min perhaps. Remember we are not adding any kind of sugar, so you can generously add some raisins for the that sweet tooth of your child’s. 🙂

Pudding should have lightly crunchy nuts on top once done but raisins should be fully soft and swallon. Chill in the fridge about 20 min and serve your toddler as a sweet dish on the side everyday and they’ll LOVE it, I promise. 🙂
