Hi, lovely mamas especially the ones who are in postpartum just like me. As you might know, I’ve been doing my postpartum meal plans series and generally what I eat to maintain my energy levels throughout the day and how I kept my weight practically the same as before getting pregnant. Here’s another sweet bite recipe that you can eat guilt-free and you won’t be able to overindulge as it is quite dense.
So, let’s dive into the sweetness………. 🙂
Ingredients:
- 1 cup Organic Peanut butter (sugar-free and inflammatory oils free such as hydrogenated oils) https://amzn.to/3wuK52R
- 1 cup Organic grass-fed butter (I prefer Danish or Irish) https://amzn.to/3PPUKMp
- 6 tbsp Coconut Sugar/erythritol /Maple Syrup
- 1 cup Keto mixed nuts (walnuts, pecan, almonds, and macadamia)
- 6 tbsp Baking cocoa powder
- Dry coconut powder for topping https://amzn.to/3Ak0yYR
Preparations:
time: ~15 min
Start with 1 cup of peanut butter. You should measure with the measuring cup so the ingredients are of the right consistency. Mix it with the 6-table spoons of the baking cocoa powder. Although you can take any cocoa powder, I think fine baking grade cocoa powder always brings out the finer taste. Add 1 cup of melted butter into it and mix well all 3 ingredients. I would take a glass bowl and a silicon spatula to mix things finely. Next, add 6 tablespoons of the keto sweetener either erythritol, coconut sugar, or maple syrup although that’s not keto you can use it if you don’t have the other 2 available. Once mixed well throw in your favorite keto nuts in it finely or roughly chopped, up to you. Once every ingredient is mixed well, add it to the molds. I used the hexagon molds that I use for ice. Those are small and bite-size which would help you not to overeat as well. Once it is ready into the molds, generously sprinkle coconut flakes over it and put it in the freezer at least for an hour, and enjoy delicious and crunchy keto peanut butter bites whenever you crave something sweet.
