Hi postpartum mamas, here is another super duper delicious sweet bite recipe if you got some sweet cravings and you want to be healthy as well especially postpartum. Just to remind every week I’ll be posting my postpartum meal plans so you guys can take inspiration and take charge of your health. As you might know, eating right is more important postpartum than in pregnancy because your hormones are all over the place, and the only thing that would manage it is healthy and balanced eating/lifestyle!

So, this recipe is inspired by one of Dr. Berg’s keto recipes but I made many changes to it according to my own taste. You are welcome to do the same but keep it keto friendly as that’s more important. let’s dive into the recipe.

Ingredients:

  • 4 oz. or 8 tbsp Mascaponi cheese (you can use cream cheese as well)
  • 3 tbsp of unsweetened baking cocoa powder
  • 2-3 tbsp of keto-friendly sweetener (monk fruit/erythritol I used)
  • 2 tbsp of Grass-fed butter
  • 1/2 cup of crushed keto friendly low carb nuts (pecans, walnuts, almonds, and macadamia)
  • 2 tbsp of hemp seeds (totally optional)

Preparations:

Time: 15 min

Start with the organic grass-fed butter. I prefer Irish butter grass fed butter as it’s better in quality and hence the taste would be better as well. Remember on keto we are trying to eat clean and healthy. Take 4oz. (8 tbsp) of cream cheese or mascarpone cheese into the bowl. I personally love the taste of mascarpone cheese so I use that. Then mix it with 2 tbsp of butter. It will be much easier to mix if you leave both the items at the room temperature so they become softer and easier to mix. Once cream cheese and butter are mixed well, add 3 tbsp of cocoa powder and mix well. Use the best quality baking cocoa powder because it makes a difference trust me! Next, add 2-3 tbsp of erythritol or monk fruit sweetener. I use coconut sugar as well. If your sweet taste tolerance is high, this might not feel quite sweet to you, so I give you the liberty to add just 1 more tbsp extra. After mixing well all the ingredients, add 1 tsp vanilla extract and mix well again. By this time you should have a very soft chewy consistency because we keep mixing after adding each ingredient. Last but not least add mixed nuts of your choice as long as they are keto friendly. I would mix hemp seeds into it as well because those are super healthy for postpartum moms. Once done adding and mixing all the ingredients, I would either put the mixture in some mold or make small balls and cover them fully with the dry coconut flakes. Freeze it for an hour and let the magic of taste begin!! Below I inserted the video where I used honeycomb style mold just because those are easy to pop and take the bites out.
